Annette Poulard would welcome pilgrims and offer them a bit of warmth by preparing a wood-fired omelette, the recipe for which has endured ever since.
Since then, this recipe has gone around the world and many celebrities have come to taste it on Mont Saint-Michel intramuros. Candidates in our presidential elections made the journey during their election campaign to taste the "omelette porte-bonheur des Présidents". Numerous religious figures, royalty, actors, singers and other world-famous celebrities have passed through the the Auberge's table.
With more than 700 recipes, Annette Poulard perpetuated the French culinary tradition internationally, earning her the honorary title of "Mère Poulard".
Over the course of 130 years, success has continued to grow, and to date more than 18 million "Mère Poulard" omelettes have been tasted at Mont Saint Michel. Every year, 75,000 guests sit down at the Auberge La Mère Poulard to savor the symbol of the place, whose production is admired by all.
The recipe was even exported to Japan and South Korea, where the La Mère Poulard Group opened restaurants perpetuating the French culinary tradition.
